You will loose modifications done by you if no template override feature is used ( in case of template files ).

But when i update i loose my modification, right?

I think you can insert a field in backend, it can be useful for language translations too (maybe a spanish or italian don't want "restaurant" in url).

you can change these keywords in router file of vRestaurant which can be found at the following location: compnents/com_vrestaurant/router.php

When i go inside a restaurant page i see this link generated by joomla and vrestaurant:
www.mysite.it/list_of_restaurants/restaurant/name_of_restaurant

I don't have restaurants, but i have "pizzeria", i can obtain:
www.mysite.it/list_of_pizzerie/restaurant/name_of_pizzeria

Can i change the "restaurant" in "pizzeria"? I think it is the "view" of component.

In admin, for have a good SEO, i think is needed to have settings for change these hardcoded urls.
